Fruit and feta salad
You’d be hard-pressed to find a bigger surprise for your tongue: juicy, sweet, sour, piquant... delicious! And then this salad is also something for the eye. You can also substitute cubes of watermelon for the strawberry and pawpaw cubes.
You’ll need
(for 4)
• ½ pawpaw, peeled and cubed
• 200 g strawberries, halved
• 3 wheels feta cheese, drained and cubed
• 1 packet (100 g) pistachio nuts, shelled and lightly roasted.
FOR THE DRESSING
• ½ cup sweet chilli sauce (we like Wellington’s)
• 2 tablespoons finely chopped fresh mint
• juice of 2 limes (or lemons)
• a few fresh mint leaves, to garnish
Here’s how
1. How pretty! Arrange the fruit cubes on a salad platter and add the feta cubes.
2. Add some crunch… Sprinkle the nuts on top.
3. And then some bite. Mix the ingredients for the dressing and drizzle over. Garnish with mint.
Go! says: Make a big bowl of salad – there won’t be leftovers. And it’ll satisfy sweet tooths if there’s no dessert.
