Macaroni cheese
Quick, easy, filling, nutritious and tasty. In this version I add spinach and bacon for good measure, but you can also leave them out.
You need (for 6)
• 1 tablespoon butter
• 1 medium onion, chopped
• 125 g streaky bacon, chopped
• 800 g fresh spinach, washed and stems cut out, finely chopped
• 300 g macaroni, uncooked white sauce
• about 5 tablespoons butter
• 4 tablespoons flour
• 2 cups of milk
• ½ cup cream
• salt and ground black pepper
• 2 cups cheddar, grated
• dried bread crumbs
Here’s how
1. Fry first. Heat the butter in a pan and fry the onion until soft. Add the bacon and fry until crisp.
Add the spinach and stir fry until soft. Put the whole lot into a greased oven dish.
2. Start the sauce. Melt the butter in a saucepan and stir in the flour until well mixed.
3. Add the milk. Turn the heat down and add the milk. Beat it constantly using a whisk to prevent it from making lumps. The sauce is ready when it starts to bubble and thicken.
4. Make it cheesy. Remove from the stove and add salt and pepper stir in half the cheese.
5. out with the elbows. Cook the macaroni in boiling, salted water – usually for between 10 and 12
minutes. Drain in a colander.
6. Layer by layer. Put the macaroni on top of the spinach-and- bacon mixture. Add the white sauce and sprinkle the remains of the cheese on top. Finally, add the bread crumbs.
7. Into the oven. Put the dish into an oven that’s heated to 180 °c and bake for 30 to 45 minutes.
8. Finishing touches. Serve with salad and bread.
