Baked Apple Pudding
This recipe by Elizabeth Haw from East London is ridiculously easy; it will make you look like an old hand in the kitchen. If you’re camping you can use a small flat-bottomed potjie and cook it over the coals (put a few coals on the lid as well).
You need (for 4-6 people)
• 1 cup flour
• 1 cup sugar
• 1 teaspoon baking powder
• ¾ cup milk
• 125 g butter
• 1 tin pie apples (400 g), drained
• a pinch of ground cinnamon or mixed spices
Here’s how
1. High and dry. Mix the flour, sugar and baking powder. Preheat the oven to 180 °C.
2. Butter me up. Add the milk and beat the mixture until smooth. Melt the butter gently and stir it into the flour-and-milk mixture.
3. A hint of spice. Put the batter in a greased oven-proof dish (or a flat-bottomed potjie) and arrange the pie apples on top. Sprinkle cinnamon or mixed spices on top and bake for about 30 minutes or until it is golden brown and set.
5. Wow! Serve hot with whipped cream or custard.
