Tangy drumsticks
Chicken drumsticks are a favourite padkos and picnic food the world over.
You need (for 4 to 6 people)
• 12 chicken drumsticks
• 4 tablespoons chives
• ½ cup orange marmalade
• 2 tablespoons fresh lemon juice
• 2 tablespoons oil
• salt and freshly ground pepper, to taste
Here’s how
1. Cover it. Preheat the oven to 200°C. Put the drumsticks in an oven dish. Mix the chives, marmalade, lemon juice, oil and seasoning. Pour the mixture over the drumsticks, rub in well and make sure they’re well covered.
2. Crisp and golden. Roast the drumsticks for 35 to 40 minutes or until done. Leave them to cool and store them in the fridge until your departure.
GO! says: Remember, chicken goes off quickly in a hot car. Keep the drumsticks as cold as possible so you don’t run into tummy trouble somewhere between Kroonstad and Bloemfontein.
