Pasta with bacon, cream cheese and pesto
This pasta recipe is ideal for the beginner cook. You can rustle it up within half an hour and impress the family no end.
You need (for 4 people)
• 350 g pasta (spaghetti, penne or whatever you have available)
• 1 packet (250 g) back bacon, chopped
• 1 onion, finely chopped
• 1 punnet (250 g) brown mushrooms, sliced
• 2 cloves garlic, crushed
• 2 tablespoons basil pesto
• 1 tub (250 g) cream cheese (or sour cream or double cream)
Here’s how
1. Start with the pasta. Boil the pasta in a large pot with salted boiling water, until done (it takes 12 to 15 minutes).
2. Get the extras ready. While you wait for the pasta water to boil, fry the bacon in a dry pan over low heat, until the fat starts frying out. Add the onion, garlic and mushrooms. Remove the mixture from the heat as soon as everything’s cooked.
3. Stir it all. As soon as the pasta has finished cooking, drain it in a colander (for beginners, that’s a bowl with holes to drain the water off) and stir in the bacon mix. Add the pesto and also stir in the cream cheese. Season with salt and black pepper if necessary. Bon appetit!
Go! says: When you fry the bacon, if you turn the heat low enough, you’ll see how it eventually starts frying in its own fat. If it gets too dry – especially after you’ve added the mushrooms – add a little butter or oil.
