Pasta with asparagus and feta
How long does it take to cook pasta? Seven to ten minutes. That’s how long you need for this delicious dinner after you’ve set up camp on a Friday evening. And all you need is your Cadac stove.
You’ll need
• 1 pack (500 g) dried pasta (twirls or of scallops are best)
• ½ cup butter
• ½ cup olive oil
• juice of 2 lemons
• a handful of fresh thyme leaves, well washed
• 2 bunches fresh green asparagus, well washed
• 2–3 discs feta cheese
Here’s how
1. You know the drill – al dente. Cook the pasta in a pot of salt water, with a dash of oil. About 7 minutes should do the trick.
2. Take your thyme… Melt the butter with the oil and lemon juice in a small saucepan, and stir in the thyme.
3. First the hard nuts. Cut the asparagus spears in half to separate the tougher ends from the tender tips. Three minutes before the pasta is ready, add the bottom halves of the asparagus to the butter mixture.
4. Make your point. About a minute later, add the tender asparagus tops. Another 2 minutes on the boil should be long enough.
5. Drain. Toss the pasta into a colander and shake out the water. Return to the pot.
6. Now for the sauce. Add the butter sauce to the pasta and stir through. Crumble the feta over the top and serve.
