Ratatouille
The ratatouille is simple but delicious.
You’ll need:
• 3 tablespoons olive oil
• 2 onions, chopped
• 4 cloves garlic
• 1 bay leaf
• 1 aubergine, cubed
• a pinch of salt
• 1 tablespoon mixed dried herbs (or fresh origanum, rosemary and thyme)
• 3 babymarrows, sliced
• 2 sweet peppers, chopped
• 1 can chopped tomatoes
• a pinch of black pepper
• olives, pitted and chopped
• parsley, finely chopped
Here’s how:
1. Good as gold. Fry the onion, garlic and bay leaf gently until golden brown. Add the aubergine, salt and herbs. Stir, put the lid on and leave it to simmer for 20 minutes.
2. Some more. Add baby marrow, sweet pepper, tomato and ground black pepper. Simmer for about 10 minutes.
3. Final flourish. Add the olives and parsley last.
