Chocolate Brownies
You’re on holiday. Who cares about an extra love handle?
You need (for about 16 squares)
• 200 g dark chocolate, broken into blocks
• ½ cup cooking oil
• 1 cup brown sugar
• 2 eggs
• 1 teaspoon vanilla essence
• ½ cup selfraising flour
• ¼ cup cocoa
• 1 packet (100 g) pecan nuts or walnuts, chopped into big chunks
• ¼ cup chocolate chips
Here’s how
1. Get started. Grease a 20 x 20 cm baking pan and preheat the oven to 180 °C.
2. Meltdown. Melt the chocolate in a glass bowl over hot water (if you melt it over direct heat the chocolate will get crumbly). Or you can melt it in the microwave; just keep an eye on it. Beat the oil, brown sugar, eggs and vanilla essence together in a separate bowl.
3. Finger-licking good. Stir the melted chocolate into the egg mixture and beat until smooth. Sift the self-raising flour and cocoa and fold into the chocolate mixture.
4. Not rich enough? Stir in the chopped nuts and chocolate chips and pour the batter into the baking pan. Bake for 30 to 45 minutes or until firm and crumbly on top.
Leave in the pan to cool and then cut it into squares.
5. Mmm! Brownies are great with coffee. Or serve them hot with a scoop of ice cream for dessert.
