Lamb mince and baby marrow dish
(serves 4-6 people)
You need
• a dash of olive oil
• 1 onion, finely chopped
• 1 big garlic clove, chopped
• 1 kg minced lamb
• 1/4 cup white breadcrumbs
• salt and freshly ground black pepper
• a pinch of dried thyme or oregano
• 4 tablespoons grated parmesan cheese
• 4 baby marrows
• a few slices mozzarella cheese
Here’s how
1. Preheat the oven to 180 ºC. Heat the olive oil in a pan and stir-fry the onion and garlic.
2. Add the mince and stir-fry until brown and granular. Add the breadcrumbs, seasoning, and parmesan cheese.
3. Slice the baby marrows lengthwise into broad strips and layer half in a shallow oven dish. Top it with half the mince, and repeat the two layers.
4. Bake in the oven for 45 minutes.
5. Take the dish out of the oven and top with mozzarella (and some more parmesan if you wish). Bake for another 10 minutes.
6. Serve with a salad and small whole potatoes.
