Fish in a flash
(serves 4-6 people)
You need
• a knob of butter
• 1 onion, chopped
• 2 big tomatoes, chopped
• frozen fish fillets (enough for all the mouths you have to feed); hake works well
• 1 cup cooked brown rice
• 1 egg, beaten
• ½ cup cream
• salt and pepper, to taste
• 1 garlic clove, finely chopped
• 1 tablespoon chopped fresh basil
• 1 tablespoon chopped fresh parsley
Here’s how
1. Preheat the oven to 180 ºC.
2. Heat the butter in a pot on the stove top and fry the onion and tomatoes until the onion is translucent. Leave to cool down.
3. Grease a shallow ovenproof dish. Put the fish fillets in the dish in one layer and top them with brown rice.
4. Mix the rest of the ingredients and the onion mixture, and ladle it on top of the rice.
5. Bake in the oven until the fish is cooked, but not longer than 20 minutes. Serve immediately.
