Rice medley

If you have some leftover boerewors, put it to good use with this easy recipe.

You need (for 4 people)
• 1 onion, sliced
• 1 tablespoon butter
• 4 babymarrows, sliced
• 125g whole button mushrooms
• 12 cherry tomatoes, halved
• 1 teaspoon salt
• 1 teaspoon freshly ground black pepper
• fresh basil leaves or parsley, chopped
• 500g boerewors, cooked
• 1 cup rice, cooked

Here’s how
1. Melt the butter in a pan and fry the onion until it turns translucent.
2. Add the baby marrows, mushrooms and tomatoes, and stir. Season to taste with salt and pepper.
3. Add the basil or parsley, and let the mixture simmer until the baby marrows are tender.
3. Slice the cooked boerewors and add the slices to the pan, with the cooked rice. Heat everything through before you dish it up. Enjoy it with breadrolls on the side.
