Broccoli and nut salad
This side dish is a winning combination with fish or meat.
You need (Serves 6)
SALAD DRESSING
• ½ cup buttermilk
• zest and juice of half a lemon
• 2 garlic cloves, bruised and chopped finely
• 1 red chilli, chopped
SALAD
• a knob of butter
• 2 slices ciabatta, crumbed
• 2 packets (200 g) long-stem broccoli or 3 cups broccoli flowers
• 8 olives, pitted and halved (optional)
• 20 almonds, roasted (optional)
Here’s how
1 Combine the salad dressing ingredients and set aside.
2 Melt the butter in a pan and fry the breadcrumbs until golden brown.
3 Steam or cook the broccoli for 5 minutes.
4 Put the broccoli in a bowl, drizzle the dressing over it and sprinkle the breadcrumbs, olives and almonds on top.
