Veggie-and-cheese burger
You need (for six people):
• 1 long French loaf
• 1 tin asparagus, drained and chopped
• oil, for frying
• 2 large onions, finely chopped
• 1 cup grated strong Cheddar cheese
• 250ml fresh cream
• black pepper, to taste
Here’s how:
1. Turn on the oven. Preheat the oven to 180ºC.
2. Slice it… Slice the loaf in half lengthwise but don’t cut right through. Hollow out the bottom half.
3. Good old onion… Heat a little oil in a pan and fry the onion until transparent. Spoon it into the hollowed-out bottom half of the loaf.
4. Layer by layer. Now spoon the asparagus pieces on top of the onion, followed by the cheese and black pepper. Whip the cream till it forms peaks (it’s easier to do if the cream is chilled) and spoon it over the filling.
5. Give it gas. Replace the “lid” of the bread, wrap the loaf in foil and put it in the oven for about 20 minutes. You can also put it on the coals – remember to turn it often so it doesn’t burn.
