Marinated chicken burgers
You need (for 4 people):
• 4 chicken breast fillets
• juice of 2 lemons
• 2 tablespoons soya sauce
• 2 tablespoons olive oil
• zest of one lemon
• 1-2 cloves of garlic, finely chopped
Here's how:
1. Get physical. Beat the chicken breasts flat with a meat hammer. You can also use a saucer - roll the edge over the breast, and it'll flatten the meat.
2. Bath time. Pack the chicken into a bowl and pour the lemon juice over. Add the soya and olive oil and then the garlic and lemon zest. Allow to marinate for at least 30 minutes.
3. Crank up the heat. Cook the chicken over medium coals - turn often and drizzle with the marinade occasionally.
Go! says: Chicken is leaner than red meat, so you can even have a second burger!
