What dish more typically personifies South Africa than this?

Braai your favourite wors and eat it with rolls and tomato smoor.

You need (for the smoor):
• 1 onion, finely chopped
• 2 cloves garlic, crushed
• 2 cans chopped tomatoes
• 2 tablespoons tomato paste
• 1 tablespoon white sugar
• 2-3 tablespoons olive oil
• 1 heaped teaspoon dry Italian herbs, oregano or basil
• salt and black pepper, to taste

Here's how:
1. Tsssssh! Fry the onion until transparrent and add the garlic.
2. See red. Add the tomatoes, tomato paste, sugar and olive oil. Simmer for 20 minutes until the sauce starts to thicken.
3. Mmm... Season to taste with the herbs, salt and pepper.

For an alternative, add 1-2 tablespoons chutney or even sweet chilli sauce to give it a bit more oompf. A few fresh chilli's or dried flakes give a bit more bite. The biggest secret to a great relish is to let is simmer for ages. As most know, it always tastes better the day after.
