Breakfast muffins
Stop for breakfast at a roadside picnic spot and enjoy a muffin and hot mug of coffee as the sun rises over a koppie.
You need (for 6 muffins)
• 80ml oil
• 1 onion, finely chopped
• 8 rashers bacon, chopped
• 1 apple, roughly grated
• 1 bunch spring onions, chopped
• salt and freshly ground black pepper
• 450ml cake flour
• 1 teaspoon baking soda
• a pinch of salt
• 150ml oat bran
• 1 cup grated mature cheddar
• 1 cup Bulgarian yoghurt
• 2 eggs
Here’s how
1. Turn up the heat. Preheat the oven to 180ºC and grease a six-cup muffin pan.
2. Cause a stir. Heat 30ml of the oil in a pan and fry the onion until shiny. Add the bacon and fry for a few minutes. Add the grated apple and stir well. Remove from the heat and stir in the spring onion. Season.
2. Mix it. Sift the flour, baking soda and a pinch of salt together. Stir in the oat bran, fried onion and bacon, and finally the cheese.
3. Into the oven. Beat the eggs and the yoghurt, and combine this with the flour mixture. Spoon the mixture into the muffin pan and bake for 20 to 25 minutes. Take the muffins out of the pan and leave to cool.
